Bill's Good Eats for Summertime Fruit

The title says it all....good eats!

PREPARATION TIME: 20 MINUTES
CHILLING TIME: one hour minimum
EQUIPMENT: saucepan, strainer, mixing bowls, hand or stand mixer, parfait or similar glasses for layering fruit and cream
YIELDS: 6-8 servings
Fruit
  • Sliced strawberries
  • Sliced pineapple
  • Blueberries
  • Sliced Kiwi
  • Mandarin oranges
  • …or any other favorite fruit

Ginger Syrup

  • 2 ounces sliced fresh ginger root
  • 2 cups sugar
  • 1 cup water

Combine sliced ginger, water and sugar in saucepan. Simmer for 20-30 minutes.

After simmering strain the mixture to remove the ginger root slices. Place aside to cool.

Once cool combine the fruit and syrup in a large container. Let the mixture set in the refrigerator for at least 60 minutes before serving. Be sure to give the mixture a good stir every 15-20 minutes.

Amaretto Whipped Cream

  • 2 cups heavy cream
  • 4 tablespoons sugar
  • Amaretto to taste (3 tablespoons does the trick for me)

Place all ingredients in a large mixing bowl. Use a mixer to form a whipped cream mixture that is very thick.

Building the Dessert

Serve in your favorite glass, layering fruit and amaretto cream.
