| EQUIPMENT: saucepan, strainer, mixing bowls, hand or stand mixer, parfait or similar glasses for layering fruit and cream |

Fruit
Ginger Syrup
Combine sliced ginger, water and sugar in saucepan. Simmer for 20-30 minutes. After simmering strain the mixture to remove the ginger root slices. Place aside to cool. Once cool combine the fruit and syrup in a large container. Let the mixture set in the refrigerator for at least 60 minutes before serving. Be sure to give the mixture a good stir every 15-20 minutes.
Amaretto Whipped Cream
Place all ingredients in a large mixing bowl. Use a mixer to form a whipped cream mixture that is very thick.
